This is my take on jajangmyun, in which i modified the recipe just a bit to fit our family’s taste. JaJangmyun is a very popular korean black bean noodle dish that has been showcased many times in Korean drama movies. It’s actually a very simple dish if you can find the right black bean paste (not black bean garlic sauce!) which are usually sold only at korean markets. they should only contain: wheat flour, soybean and maybe msg and preservatives. At other asian stores if it says black bean, and is a korean brand then you got the right stuff!

Ingredients for 6-7 Servings:

  • 1 IB of Pork shoulder, diced
  • 1/2 cup of black bean paste (Jajangmyeon – black bean paste)
  • 1 TB rice wine
  • 1 TB of soy sauce
  • 1/4 cup of oil
  • 1 garlic clove, minced
  • 1 thumb size ginger, minced
  • 6 zucchini, diced
  • 1 TB corn starch mixed in 1 TB water
  • 1 cup of chicken broth
  • 2 green onions, minced
  • 6 garlic cloves, minced (~3 tsp of garlic powder)
  • 250 grams of oriental style noodles (wide or thin ones, up to you!)

1. chop your pork, mix it in the soy sauce, rice wine garlic and ginger in a bowl and set aside for now.

2. boil a pot of water, when boils – add the noodles for 5 minutes or until softens (pinch with your fingers). drain and set aside.

3. add 1/4 cup of oil, the  black bean sauce, and stir for a couple minutes before mixing in the marinated pork. in a few minutes add the diced zucchinis along with the broth. stir occasionally for the next few minutes. add the starch water. stir for a minute, and let it simmer for a couple minutes. pour ladles of the sauce on top of individual bowls of noodles&green onions. mix then serve immediately.
